Spinach and Feta Appetizer
Seriously easy and quick
Seriously easy and quick
I didn’t
follow a recipe, but this is how I made this delicious distraction from
cleaning my shop.
Goodies
you will need:
1 thawed
ready-made pie crust
2 small garden or green onions, rough sliced
2 tsp of butter
1 tsp of mayonnaise
½-1 Cup of crumbled Feta Cheese
1 box or bag of frozen spinach, place in a strainer in sink, thaw and give it a good squeeze to get liquid out. (Fresh spinach would probable work also but never have tried)
Grapeseed oil, or oil of your choice

Grapeseed oil, or oil of your choice
Preheat oven
to 450 degrees
Unroll pie
shell in the center sprinkle with onions, butter, spinach and Feta cheese. Roll long side up and over to the center, fold
in both sides and then roll other long side up and over to cover spinach
mixture.
Take your
mayonnaise and with a brush (or spoon) brush across the top of your folded
dough. Sprinkle on a tsp. of Parmesan cheese. Both of these are optional but
they give your spinach appetizers a nice golden look
.
Take your oil
and brush a very small amount onto a cookie sheet. Place your rolled dough onto
cookie sheet and bake for 10 – 12 min until golden brown. Let cool then slice
into 1” slices.
Makes about
12 pieces.

Farmers Markets
Even though it has been one of the hottest summer recorded we still have local farmers and farmer markets that are offering the best produce and now is the time to take advantage. Whether it is just to add something fresh to the dinner table or you are stocking up for the upcoming winter season everyone should stop by a road side stand and support the gardener or farmer in your neighborhood.
Apples Peak season is from September to November
